¼ cup aquafaba (60 mL), (canned chickpea liquid)
2 tablespoons sugar
2 teaspoons matcha powder
White Russian
4 oz vodka (120 mL)
1 ½ oz coffee liqueur (45 mL), such as Kahlúa
2 oz heavy cream (60 mL)

How to Make It
1. Step
Make the dalgona matcha: In a medium bowl, whip the aquafaba with an electric hand mixer on medium speed until foamy and stiff peaks form, 2–3 minutes. Add the sugar and whip for another 30 seconds. Add the matcha and whip for another 30 seconds, until well incorporated. Set aside.

Make the white Russian: In a cocktail shaker or medium bowl, stir together the vodka, coffee liqueur, and cream.

Fill 2 rocks glasses with ice. Divide the white Russian evenly between the glasses, then top with the dalgona matcha.
