Fried Rice: Tofu Scramble Delight
2 cups firm tofu (500 g), diced
1 cup teriyaki sauce (240 mL)
1 tablespoon vegetable oil
1 ½ cups kimchi (225 g)
3 large eggs, beaten
2 cups white rice (400 g), cooked
2 tablespoons soy sauce
1 tablespoon sesame oil
How to Make It
In a medium bowl, combine the tofu and teriyaki sauce. Marinate in the refrigerator for 30 minutes.
In a large pan, heat the vegetable oil over medium-high heat. Add the marinated tofu and cook until golden and crispy, about 5 minutes. Remove the tofu from pan and set aside.
To the same pan, add the kimchi and eggs to the pan and cook until the eggs are set, about 3 minutes.
Add the rice, soy sauce, and sesame oil and cook until heated through, about 5 minutes.
