How to Make It

1. Step
In a bowl, combine potatoes, onion, egg, flour, salt and pepper. Mix well and form into palm size circles.
2. Step
Heat oil to 380°F before placing the latkes in the pan. Then, fry for about 4-5 minutes per side, until nice and brown.
3. Step
Remove from the pan and place on a paper towel-lined plate to drain the excess oil.
4. Step
Garnish with chopped up green scallions. Serve.
