½ Spam®, (1 12 ounce can (340 G))
2 tablespoons olive oil, divided
1 carrot, peeled and chopped
¼ cup onion (35 g), diced
1 teaspoon fresh ginger, minced
¼ cup frozen peas (35 g)
1 clove garlic, minced
1 cup white rice (200 g), cooked
1 tablespoon soy sauce
kosher salt, to taste
freshly ground black pepper, to taste

How to Make It
1. Step
Dice the Spam into medium cubes.
2. Step
In a large cast iron skillet, heat 1 tablespoon of olive oil over medium heat. Add the Spam and cook until golden brown and crispy, stirring often, 3–5 minutes. Remove the Spam from the pan and set aside.
3. Step
Add the remaining tablespoon of olive oil to the pan. Add the carrots, onion, and ginger and cook until softened, about 5 minutes.
4. Step
Add the peas and garlic and cook until the garlic is fragrant, about 1 minute.
5. Step
Add the rice, soy sauce, salt, pepper, and crispy Spam and stir until heated through, another minute or 2.
