Preheat the oven to 350°F and in a medium bowl, mix together oats and vanilla yogurt.

Let the mixture sit for 20 minutes, then add brown sugar and melted butter. Mix well.

To this mixture, add salt and vanilla essence and mix. Then, add egg, egg yolk, and mix well.

Fold in chocolate chips.

Grease a medium-sized baking tray. Then, take a small handful of the dough/batter, form a circle, place on the tray and press down into the shape of a cookie. Repeat with remaining dough.
