Ingredients
2 lb shrimp (910 g), peeled and cleaned
1 stick butter
1 medium onion, diced
1 bell pepper, diced
2 stalks celery, chopped
6 cloves garlic, minced
1 cup green onion (40 g), chopped
1 cup fresh parsley (40 g), chopped
1 can tomato sauce
1 can diced tomato
1 can hot Ro-Tel tomatoes
1 can mushroom soup
2 cups veggie broth (480 mL)
1 tablespoon sugar
salt and pepper, to taste
¼ teaspoon cayenne pepper

How to Make It
1. Step
Saute garlic, onion, bell pepper, and celery in butter. Add all the cans of tomatoes, broth and mushroom soup and stir well to incorporate.
2. Step
Cook covered, on low heat, for 1.5 hours or longer. Add shrimp and cook for another 15 minutes or until done.
3. Step
Add green onions and parsley and cook another 10 minutes. Remove from heat.
4. Step
Serve over hot rice .
