Ingredients
2 cups murungai leaves (200 g), drumstick vegetable
1 tablespoon oil
1 teaspoon black mustard seeds
4 pieces garlic, crushed
2 thai chilis, chopped
1 teaspoon turmeric powder
curry leaf
1 teaspoon salt
5 shallots, sliced
½ cup water (120 mL)
How to Make It
1. Step
Add oil to a pan.
2. Step
Add mustard, curry leaves, onion, garlic and sauté.
3. Step
Add the murungai leaves and stir for a few minutes.
4. Step
One softened slightly, add turmeric, salt and chillies. Add water.
5. Step
Upon boiling of the mixture, reduce to a simmer and cook with a lid on.
6. Step
*Note: If desired, add ¼ cup unsweetened grated coconut.
7. Step
Serve alongside steamed basmati or jasmine white rice and ghee.
