Ingredients
2 grapefruits, quartered and squeezed, juice reserved for another use
1 cup sugar (200 g)
ice
2 oz tequila (60 mL)
1 oz lime juice (30 mL)
1 oz grapefruit peel simple syrup (30 mL)
¼ cup club soda (60 mL), to taste
1 wedge grapefruit
How to Make It
1. Step
In a medium bowl, combine the grapefruit rinds and sugar. Toss to coat the rinds with the sugar, then cover. Let sit, stirring every 45 minutes, for about 4 hours, or until the sugar is completely dissolved and there’s syrup in the bottom of the bowl.
2. Step
Strain the syrup through a fine-mesh sieve or cheesecloth, pushing to extract as much syrup as possible. Store in an airtight container in the refrigerator for up to 3 weeks.
3. Step
In a cocktail shaker filled with ice, combine the tequila, lime juice, and simple syrup. Shake vigorously for 20 seconds.
4. Step
Strain into a glass filled with ice and top with club soda.
