1 tomato, diced
1 cup broccoli floret (150 g), finely chopped
2 cups potato hash brown (260 g)
2 cups shredded cheddar cheese (200 g)
1 cup pancake mix (125 g)
4 eggs
2 cups milk (470 mL), of choice
½ teaspoon pepper

scallion, thinly sliced, for serving

How to Make It
1. Step
Preheat oven to 400°F (200°C).

Place the bacon, tomato, and broccoli in greased casserole dish.

Sprinkle hash browns and cheese on top.
