Set smoker to 300°F. Place beef in a cast iron skillet and brown in a smoker. Once browned, add taco seasoning. Then, remove beef from the skillet and set aside and set the smoker to 225°F.
2. Step
Line skillet with a layer of chips, cheese, meat, tomatoes and onion. Then, repeat these steps until the skillet is full. Top skillet with remaining cheese.
3. Step
Smoke at 225° for 10 minutes. Then, set the smoker to 400° and cook until the cheese is golden brown.
4. Step
Take the skillet off of the smoker and top with avocado, green onion, and tomato.
