Ingredients
15 oz sweet potato (435 g), (usually equal to 3-5 potatoes, depending on size),boiled- reserve 2 tbsp water from boiling potatoes
1 ¼ cups granulated sugar (250 g)
⅓ cup water (80 mL)
⅓ cup vegetable oil (80 mL)
2 large eggs
1 ¾ cups all purpose flour (215 g)
1 teaspoon baking soda
¾ teaspoon salt
½ teaspoon nutmeg
¼ teaspoon baking powder
½ cup pecan (50 g), chopped, optional
½ teaspoon allspice
1 teaspoon cinnamon

How to Make It
1. Step
Preheat the oven to 350°F and grease a 9x5 (22x12) loaf pan or bundt cake pan.

In a large mixing bowl, mash sweet potatoes in 2 tbsp of liquid from the sweet potato boil.

Add sugar, water, oil, and eggs to mashed sweet potatoes and mix well.
4. Step
Add in flour, baking soda, salt, nutmeg, cinnamon and allspice, and baking powder. Mix well and fold in pecans if using.
5. Step
Pour batter into pans and bake 30-45 minutes (or 60-70 minutes for larger pans),until toothpick comes out clean.
6. Step
Cool cake and serve alongside tea or coffee.
