1 loaf ciabatta bread, cut in half lengthwise
2 tablespoons butter
½ cup white onion (85 g), diced
2 tablespoons garlic, minced
1 can green chillies
1 cup mild salsa (230 g)
2 cups rotisserie chicken (200 g), shredded
1 packet taco seasoning
½ cup chicken stock (120 mL)
1 cup frozen corn (140 g)
1 cup shredded monterey jack cheese (100 g)

How to Make It
1. Step
Slice the ciabatta bread lengthwise and place on a foil-lined cookie sheet. Set aside.

Saute the onion and garlic in butter until soft in a skillet over medium heat.

Stir in the shredded chicken, chilies, salsa, broth, and taco seasoning. Cook, stirring occasionally, until the mixture thickens, about 10 minutes.

Stir in frozen corn and cook for another 5 minutes, stirring often.

Lightly toast bread halves.
6. Step
Spoon ½ of the chicken mixture on each bread half. Then, sprinkle with the cheese.
7. Step
Place the pan back under the broiler for about 3-5 minutes, until the filling is hot and the cheese is melted.
8. Step
Serve warm.
