Ingredients
1 tablespoon oil
3 cloves garlic, minced
salt, to taste
pepper, to taste
1 onion, diced
1 red bell pepper, diced
1 potato, cubed
1 ear corn, kernels removed
6 cups vegetable broth (1 ½ L)
2 cups water (480 mL)
1 tablespoon dried thyme
2 tablespoons paprika
1 bay leaf
1 cup milk (240 mL), milk alternative

How to Make It
1. Step
Combine oil, garlic, and onion, salt, and pepper in a large pot over medium heat for 3 minutes.
2. Step
Add red pepper, potato, and corn. Stir for another 2 or 3 minutes.

Add vegetable broth, water, thyme, paprika, and bay leaf. Stir.
4. Step
Bring to a boil, place the lid on the pot, and simmer for 10 minutes.

Add milk or milk alternative, and stir. Remove bay leaf.

Allow to cool a little before serving.
