Ingredients
2 cups all-purpose flour (250 g)
1 cup water (240 mL)
½ cup extra-virgin olive oil (120 mL)
kosher salt, to taste
2 cups refried black bean (280 g), warm
½ cup queso fresco (75 g), crumbled
8 tablespoons crema fresca
How to Make It
1. Step
In a large bowl, mix together the flour, water, olive oil, and salt. Knead for about 2 minutes, or until a soft dough forms.
2. Step
Divide the dough into 8 equal portions and shape into balls. Cover the dough balls with a kitchen towel and let rest for 30 minutes.
3. Step
Stretch the dough balls carefully into rough circles or ovals, about 6 inches in diameter.
4. Step
Heat a large skillet over medium heat. Working one at a time, cook the baleadas for about 1 minute on each side, until the center rises and small brown spots appear.
5. Step
Top each baleada with black beans and queso fresco, then finish with a drizzle of crema. Serve immediately.
